TUSCAN CHICKEN


INGREDIENTS :


CHICKEN :


3 OR 4 CHICKEN BREASTS

1 TABLESPOON ALL PURPOSE FLOUR

2 TABLESPOONS OLIVE OIL

1/4 TEASPOON SALT

1/2 TEASPOON OREGANO

1/2 TEASPOON THYME

1/2 TEASPOON PAPRIKA

1/4 TEASPOON GARLIC POWDER


SAUCE :


3 GARLIC CLOVES ( minced )

1 MEDIUM YELLOW BELL PEPPER

1 MEDIUM ONION ( diced )

1 CUP CHICKEN STOCK

1 TABLESPOON TOMATO PASTE

1 TEASPOON OREGANO

1/3 CUP WHITE WINE

1/3 CUP HEAVY CREAM

3 CUPS BABY SPINACH

1 CUP SUN DRIED TOMATOES

1 CUP PARMESAN CHEESE ( fine grated )

1 TABLESPOON PARSLEY

A PINCH SALT / 2 PINCHES BLACK PEPPER

2 VINES PICCOLO TOMATOES



INSTRUCTIONS :


CHICKEN :


.PRE HEAT FRYING PAN ON HIGH HEAT ADD 2 TABLESPOONS OLIVE OIL

.IN A BOWL MIX

1 TABLESPOON ALL PURPOSE FLOUR

1/4 TEASPOON SALT

1/2 TEASPOON OREGANO

1/2 TEASPOON THYME

1/2 TEASPOON PAPRIKA

1/4 TEASPOON GARLIC POWDER

.ADD CHICKEN BREASTS TO FRYING PAN AND SPRINKLE ON THE SEASONING MIX

.COOK FOR 3 MINUTES AND TURN OVER SPRINKLE SEASONING ON THE OTHER SIDE

.COOK FOR ANOTHER 3 MINUTES AND TURN AGAIN

.COOK FOR A FINAL 3 MINUTES

.REMOVE CHICKEN AND SET ASIDE


SAUCE :


.IN A FRYING PAN ADD

3 GARLIC CLOVES ( minced )

1 MEDIUM YELLOW BELL PEPPER

1 MEDIUM ONION ( diced )

COOK UNTIL TENDER ( 3 to 4 minutes )

.ADD 1 CUP CHICKEN STOCK

1 TEASPOON TOMATO PASTE

1 TEASPOON PAPRIKA

1 TEASPOON OREGANO

1/3 CUP WHITE WINE

1/3 CUP HEAVY CREAM

.STIR WELL

.ADD 3 CUPS BABY SPINACH AND COOK FOR 3 TO 4 MINUTES

.ADD 1 CUP SUN DRIED TOMATOES ( chopped ) AND STIR


COOKING CHICKEN & SAUCE :


.ADD CHICKEN AND SEASON WITH A PINCH OF SALT AND 2 PINCHES OF BLACK PEPPER

.ADD 1 CUP OF PARMESAN CHEESE ( grated ) AND 1 TABLESPOON OF PARSLEY ( chopped )

.COVER WITH A LID AND REDUCE HEAT TO SIMMER AND COOK FOR ABOUT 15 TO 20 MINUTES

.AFTER ABOUT 5 MINUTES TURN THE CHICKEN OVER, STIR AND COVER WITH A LID AND CONTINUE TO SIMMER

.5 MINUTES BEFORE THE CHICKEN IS DONE ADD 2 VINES OF PICCOLO TOMATOES, COVER WITH LID AND CONTINUE TO SIMMER
