SLOW COOKED CHICKEN & HOMEMADE GRAVY


INGREDIENTS :

1 MEDIUM CHICKEN

3 MEDIUM SWEET POTATOES

3 MEDIUM CARROTS

1 LARGE WHITE ONION

2 MINCED GARLIC CLOVES

1 FRESH SQUEEZED LEMON

1/2 TEASPOON SALT

1/2 TEASPOON GARLIC POWDER

1/2 TEASPOON PAPRIKA

1/4 TEASPOON GROUND BLACK PEPPER

1/2 TEASPOON THYME


GRAVY INGREDIENTS :


JUICE FROM COOKED CHICKEN

1 CHICKEN STOCK CUBE

3 TABLESPOONS PLAIN FLOUR


INSTRUCTIONS :


CHICKEN :


.ADD CHOPPED SWEET POTATOES, SLICED CARROTS, SLICED ONIONS & MINCED GARLIC TO THE BASE OF THE SLOW COOKER

.PLACE CHICKEN ON THE VEGETABLES

.ADD LEMON JUICE ( 1 FRESH SQUEEZED LEMON )

.ADD 1/2 TEASPOON SALT

.ADD 1/2 TEASPOON GARLIC POWDER

.ADD 1/2 TEASPOON PAPRIKA

.ADD 1/4 TEASPOON GROUND BLACK PEPPER

.ADD 1/2 TEASPOON THYME

.RUB SEASONING ON TO THE CHICKEN

.COOK ON LOW HEAT FOR 8 HOURS

.ONCE COOKED CAREFULLY REMOVE CHICKEN TO KEEP THE VEGETABLES INTACT


GRAVY :


.PASS CHICKEN JUICE LEFT IN THE SLOW COOKER THROUGH A SIEVE REMOVING ANY CHICKEN OR VEGETABLE BITS AND POUR INTO A POT

.ADD 1 CHICKEN STOCK CUBE AND STIR ON HIGH HEAT

.ADD FIRST TABLESPOON OF PLAIN FLOUR AND STIR

.ADD SECOND TABLESPOON FLOUR AND CONTINUE TO STIR

.ADD THIRD AND FINAL TABLESPOON OF FLOUR AND STIR UNTIL GRAVY THICKENS
