PUMPKIN SOUP [ PUMPKIN WEEK ]


INGREDIENTS :


530 Grams Fresh Pumpkin Puree

2 minced Garlic Cloves

2 Large Chopped Onions

1 Chopped Celery Stalk

2 Large Chopped Carrots

1 Tablespoon Vegetable Oil

600 ML Vegetable Stock

Salt & Pepper To Taste

Heavy Cream ( or vegan alternative )

Chopped Parsley

Pumpkin Seeds


INSTRUCTIONS :


.In a pot add 1 Tablespoon Vegetable Oil on high heat

.Add 2 Large Chopped Carrots

.Add 1 Chopped Celery Stalk

.Add 2 Large Chopped Onions

.Add 2 minced Garlic Cloves

.Occasionally stir and cook until tender ( about 8 to 10 minutes )

.Add 600 ML Vegetable Stock stir and cook for about 5 to 7 minutes

.Turn to low heat and blend ingredients

.Add 530 Grams Fresh Pumpkin Puree and stir

.Add Salt & Pepper to taste and cook for about 5 minutes

.Blend ingredients again

.Serve with heavy cream ( or vegan alternative ), Pumpkin Seeds and chopped Parsley
