PRAWN & SAUSAGE JAMBALAYA


INGREDIENTS :


181 GRAMS PRAWNS

382 GRAMS SAUSAGES

1 1/2 CUPS LONG GRAIN RICE

VEGETABLE STOCK BROTH

( 3 cups water & 2 vegetable stock cubes )

6 SCALLION STOCKS ( trimmed )

1 MEDIUM GREEN BELL PEPPER

2 CELERY STOCKS ( chopped )

2 GARLIC CLOVES ( minced )

122 GRAMS GREEN PEAS

1/2 TEASPOON THYME

1/2 TEASPOON GROUND BLACK PEPPER

2 TABLESPOONS VEGETABLE OIL


INSTRUCTIONS :


.ADD 2 TABLESPOONS OF VEGETABLE OIL TO FRYING PAN ON MEDIUM HEAT

.ADD SAUSAGE PIECES AND COOK UNTIL SLIGHTLY BROWN

.ONCE SLIGHTLY BROWN REMOVE FROM SAUSAGES AND SET ASIDE

.TO A FRYING PAN ADD 1 GREEN BELL PEPPER ( chopped ), 2 CELERY STOCKS ( chopped ), 2 GARLIC CLOVES ( minced ) & 6 SCALLION STOCKS ( trimmed )

.COOK FOR 5 MINUTES OCCASSIONALLY STIRRING

.AND VEGETABLE STOCK BROTH ( 3 cups water & 2 vegetable stock cubes )

.ADD SAUSAGES

.ADD GREEN PEAS

.ADD 1/2 TEASPOON THYME & 1/2 TEASPOON GROUND BLACK PEPPER

.ADD 1 1/2 CUPS LONG GRAIN RICE

.STIR WELL AND BRING TO THE BOIL

.ONCE BROUGHT TO THE BOIL COVER WITH A LID AND REDUCE HEAT TO SIMMER AND COOK FOR 10 MINUTES

.ADD PRAWNS AND COVER WITH A LID AND COOK FOR ANOTHER 10 TO 15 MINUTES OR UNTIL PRAWNS ARE COOKED AND THE RICE IS TENDER
