PASTA WITH WALNUT SAUCE


INGREDIENTS :


50 grams walnuts

3 chopped scallions

2 minced garlic cloves

1/2 tablespoon chopped parsley

1/2 tablespoon chopped basil

5 tablespoons olive oil

450 grams frozen broccoli florets

350 grams fusilli pasta

1 finely chopped chilli pepper


INSTRUCTIONS :


.in a pot cook 350 grams fusilli pasta in water with 1 teaspoon salt, 1 tablespoon olive oil

.once cooked drain water and set pasta aside

.in a blender add 50 grams walnuts, 3 chopped scallions, 1 minced garlic clove, 1/2 tablespoon chopped parsley

1/2 tablespoon chopped basil

.Blend to a fairly smooth paste, gradually add 3 tablespoons olive oil

.blend into well mixed paste, add salt and pepper to taste

.in frying pan add 2 tablespoons olive oil on high heat

.add 1 minced garlic clove, 1 finely chopped chilli pepper, cook for 2 minutes

.add 450 grams defrosted broccoli florets, walnut paste and cook for 3 to 4 minutes

.in a mixing bowl add pasta and broccoli and mix together
