EGG CURRY


INGREDIENTS :


8 boiled eggs

2 onions quartered

3 tomatoes quartered

1 fresh chopped red chilli

2 dried red chillies

3/4 teaspoons cumin seeds

4 cloves

1 cinnamon stick

4 cardamom pods

4 tablespoons vegetable oil

1/2 teaspoon turmeric powder

1 1/4 teaspoon chilli powder

1/2 tablespoon ginger garlic paste

2 teaspoons coriander powder

1 teaspoon fennel seeds

1/2 teaspoon salt

1 cup water

1/4 teaspoon garam masala

1 tablespoon dry coriander leaves


INSTRUCTIONS :


.in a blender add 3 tomatoes quartered, 2 onions quartered, 1 fresh chopped red chilli

.blend until smooth consistency and set aside

.in a frying pan add 2 tablespoons vegetable oil on medium to high heat

.add 1/4 teaspoon turmeric powder, 1/4 teaspoon chilli powder and mix

.add 8 boiled eggs and cook and coat for 1 minute

.set eggs aside

.in same frying pan add 2 tablespoons vegetable oil

.add 3/4 teaspoons cumin seeds, 4 cloves,1 cinnamon stick

.add 2 dried red chillies, 4 cardamom pods, cook for 3 minutes

.add tomato paste sauce, cook for 2 minutes on medium heat

.add 1/2 tablespoon ginger garlic paste, cook for 6 minutes on medium heat

.once reduced add 1/4 teaspoon turmeric powder, 1 teaspoon chilli powder, 2 teaspoons coriander powder

.add 1 teaspoon fennel seeds, 1/2 teaspoon salt and mix

.cook for 2 minutes on low heat

.add 1 cup water, add 1/4 teaspoon garam masala and mix

.bring to the boil and reduce to medium heat

.add eggs, 1 tablespoon dry coriander leaves and mix

.cover with lid for 3 minutes
