CORN CHOWDER


INGREDIENTS :


2 CUPS + 2 TABLESPOONS WATER

6 GARLIC CLOVES ( minced )

1 MEDIUM GREEN BELL PEPPER ( chopped )

1 MEDIUM RED BELL PEPPER ( chopped )

1 MEDIUM ONION ( chopped )

1 VEGETABLE STOCK CUBE

400 ML COCONUT MILK

1 TABLESPOON CHILLI POWDER

1 TABLESPOON GARLIC POWDER

1 TABLESPOON CUMIN POWDER

1/2 TEASPOON GROUND BLACK PEPPER

1 CUP RED LENTILS

285 GRAMS CORN


INSTRUCTIONS :


.PRE HEAT POT ON MEDIUM HEAT ADD 2 TABLESPOONS WATER ONCE HOT ADD 6 GARLIC CLOVES ( minced )

.SAUTE GARLIC FOR A COUPLE OF MINUTES

.ADD 1 MEDIUM GREEN + 1 MEDIUM RED BELL PEPPER ( chopped ) AND CONTINUE TO SAUTE

.ADD 1 MEDIUM ONION ( chopped ) AND SAUTE UNTIL TENDER

.ONCE TENDER ADD 2 CUPS WATER AND 1 VEGETABLE STOCK CUBE

.STIR UNTIL STOCK CUBE HAS DISSOLVED

.ADD 400 ML COCONUT MILK AND STIR

.ADD 1 TABLESPOON CHILLI POWDER / 1 TABLESPOON GARLIC POWDER / 1 TABLESPOON CUMIN POWDER / 1/2 TABLESPOON BLACK PEPPER AND STIR WELL

.ADD 1 CUP RED LENTILS

.ADD 285 GRAMS CORN

.COOK UNTIL BOILING, ONCE BOILED BRING TO A SIMMER COVER WITH LID AND COOK FOR 10 MINUTES

.ONCE COOKED REMOVE CHOWDER FROM POT AND PLACE IN A BLENDER

.LIGHTLY BLEND UNTIL CHOWDER TEXTURE

.SERVE WITH WHITE RICE AND ENJOY
