COCONUT SHRIMP CURRY


INGREDIENTS :


MARINADE


180 grams shrimp

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1/4 teaspoon cayenne pepper

2 tablespoons lemon juice


SAUCE


1 tablespoon coconut oil

1 chopped medium onion

3 minced garlic cloves

1 tablespoon minced ginger

1/2 teaspoon ground black pepper

1/2 teaspoon salt

1/2 teaspoon turmeric

2 teaspoons ground coriander

1 teaspoon curry powder

6 chopped tomatoes

13.5 ounces coconut milk


INSTRUCTIONS :


.in a bowl add 180 grams shrimp

.add 2 tablespoons lemon juice, 1/4 teaspoon cayenne pepper, 1/4 teaspoon salt

1/4 teaspoon ground black pepper

.mix together and leave to sit

.In a frying on medium heat add 1 tablespoon coconut oil

.once oil melts add 1 tablespoon minced ginger, 3 minced garlic cloves

.add 1 chopped medium onion, cook until tender

.add 6 chopped tomatoes and cook for 1 minutes

.add 1/2 teaspoon ground black pepper

1/2 teaspoon salt, cook for 1 minutes

.add 1/2 teaspoon turmeric, 2 teaspoons ground coriander, cook 1 minute

.add 1 teaspoon curry powder, cook for 1 minute

.add 13.5 ounces coconut milk and cook for 10 minutes

.add 180 grams shrimp ( remove juice ) and continue to cook until shrimp is cooked
