INGREDIENTS :


2 CHICKEN BREASTS

250 GRAMS EGG NOODLES

500 GRAMS VEGETABLE MIX( beansprouts, carrots, red onion, green cabbage, broccoli, spring onion )

2 CLOVES MINCED GARLIC

SAUCE INGREDIENTS :

1/3 CUP VEGETABLE STOCK

( 1/2 stock cube / 1/3 cup water )

1 TABLESPOON CORN STARCH

2 TABLESPOONS OYSTER SAUCE

2 TABLESPOONS SOY SAUCE

1/2 TABLESPOON BROWN SUGAR

1/4 TABLESPOON GROUND GINGER

1/4 TABLESPOON SRIRACHA SAUCE

A PINCH WHITE PEPPER


INSTRUCTIONS :


SAUCE PREPARATION :


.PLACE 1/3 CUP VEGETABLE STOCK IN MIXING BOWL ( 1/2 stock cube - 1/3 cup water )

.ADD 1 TABLESPOON CORN STARCH

.ADD 2 TABLESPOONS OYSTER SAUCE

.ADD 2 TABLESPOONS SOY SAUCE

.ADD 1/2 TABLESPOON BROWN SUGAR

.ADD 1/4 TABLESPOON GROUND GINGER

.ADD A PINCH OF WHITE PEPPER

.ADD A 1/4 TABLESPOON SRIRACHA SAUCE

.MIX TOGETHER AND SET ASIDE


NOODLE PREPARATION :


.ADD 250 GRAMS OF EGG NOODLES TO LARGE BOWL

.ADD BOWLING WATER TIL NOODLES ARE SUBMERGED IN WATER

.LEAVE IN WATER UNTIL NOODLES ARE SOFT ( about 4-5 minutes )


COOKING LO MEIN :


.PRE HEAT WOK AND 3 TABLESPOONS OF VEGETABLE OIL

.ADD 2 CLOVES OF MINCED GARLIC

.ADD 2 THINLY SLICED CHICKEN BREASTS

.ADD A PINCH OF GROUND BLACK PEPPER

.COOK CHICKEN UNTIL IT WHITENS

.ONCE CHICKEN HAS WHITENED ADD 500 GRAMS VEGETABLE MIX ( beansprouts, carrots, red onion, green cabbage, broccoli & spring onion )

.COOK FOR ABOUT 5 MINUTES

.ONCE VEGETABLES ARE TENDER ADD 250 GRAMS EGG NOODLES

.ADD SAUCE MIXTURE AND BRING HEAT TO A LOW TO MID SIMMER AND COOK UNTIL SAUCE THICKENS OCCASIONALLY STIRRING
