BUTTERNUT SQUASH & SAUSAGE STUFFING


INGREDIENTS :


1 cubed butternut squash

4 slices country loaf

2 large chopped pork sausages

1/4 teaspoon salt

1 tablespoon dried parsley

1 1/2 teaspoons sage

1/4 teaspoon ground pepper

1 medium chopped onion

2 chopped celery Stalks

1 tablespoon vegetable oil

2 cups hot vegetable stock broth




INSTRUCTIONS :


.preheat oven to 180 C / 356 F

.cut butternut squash into cubes and place on a baking tray with parchment paper

.bake in the oven for 30 minutes

.cut 4 slices of country loaf into cubes and place on a baking tray with parchment paper

.bake in the oven for 30 minutes

.Heat frying pan on medium to high heat, add 1 tablespoon vegetable oil

.add 2 chopped celery stalks, 1 medium chopped onion

.add 1/4 teaspoon salt, 1/4 teaspoon ground pepper

.cook until tender

.add 2 large chopped pork sausages

.add the cooked butternut squash and stir

.add 2 cups hot vegetable stock broth

.add the cooked country bread and stir

.add 1 tablespoon dried parsley

, 1 1/2 teaspoons sage and stir

Cook until the broth soaks up ( 5 minutes )

.remove from frying pan and place in a baking dish

.cover with foil and bake for 20 minutes, remove foil and bake for 5 minutes ( 25 total )
