200 grams Madeira Cake

285 ml boiling water

285 ml cranberry juice

135 grams jelly

780 grams custard

18 sliced strawberries

150 grams blueberries

270 ml heavy cream

2 tablespoons icing sugar


.slice 200 grams madeira cake and cut into cubes

.place cake cubes into trifle dish

.break jelly into cubes and place in a jug

.add 285 ml boiling water and mix until jelly dissolves

.add 285 ml cranberry juice and stir

.pour jelly liquid into trifle dish

.place in fridge to set for 90 minutes to 2 hours

.layer sliced Strawberries on the cake and jelly

.layer 100 grams of blueberries on the strawberries

.pour in 780 grams custard and even out

.place back in the fridge to continue setting

.in a mixing bowl add 270 ml heavy cream, 2 tablespoons icing sugar

.blend until thick consistency

.layer cream on the custard and even out

.top with sliced strawberries and blueberry

.sprinkle with icing sugar

.place back in the fridge to set for another 2 to 3 hours
